Italian Chopped Sandwich
- 1 large Italian roll or ciabatta bread, sliced in half
- 4 slices of salami
- 4 slices of mortadella
- 4 slices of capicola
- 4 slices of provolone cheese
- 1/2 cup chopped lettuce (romaine or iceberg)
- 1/4 cup chopped tomatoes
- 1/4 cup thinly sliced red onion
- 1/4 cup sliced pepperoncini peppers
- 1/4 cup sliced black olives
- 1/4 cup sliced roasted red peppers
For the Dressing
- 3 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 garlic clove, minced
- Salt and pepper, to taste

Directions:
- Prepare the Dressing:
- In a small bowl, whisk together olive oil, red wine vinegar, oregano, basil, minced garlic, salt, and pepper until well combined. Set aside.
- Assemble the Sandwich:
- Lay the bottom half of the Italian roll or ciabatta bread on a clean surface.
- Layer the salami, mortadella, capicola, and provolone cheese evenly on the bread.
- In a separate bowl, combine the chopped lettuce, tomatoes, red onion, pepperoncini peppers, black olives, and roasted red peppers.
- Drizzle the prepared dressing over the chopped vegetables and toss to coat evenly.
- Build the Sandwich:
- Spread the dressed vegetable mixture evenly over the meats and cheese on the bread.
- Place the top half of the bread over the fillings.
- Serve:
- Cut the sandwich into halves or quarters, if desired.
- Serve immediately and enjoy your delicious Italian chopped sandwich!
